Badam, kaju, pista: what to buy and for what

Pistachios (pista) add colour. A small layer on top of a mixed box looks generous, and a few slivers finish a kheer or barfi nicely. California pistachios are available in 250 g packs.

Using dry fruits in Diwali cooking

For kaju katli and other cashew sweets, pieces are enough because the cashews get ground anyway. Kheer, phirni and halwa usually want raisins and cashews, with almonds or pistachios on top. Laddoo works well with chopped almonds, cashews, walnuts and raisins, as long as you chop them to a similar size so the laddoo binds. Barfi looks best with pistachio on top, and savoury mixtures need cashew pieces and raisins, with the raisins added last so they do not turn hard. These are common uses, not rules. Every family and region does it differently.

For a quick snack, roast plain makhana in a little ghee on low heat until it snaps when pressed, toss it with salt and pepper, then mix in fried cashew pieces and raisins. Buying fresh and storing it right
