Buying Cashew in Bulk for Sweets, Catering and Bakery: Which Grade for Which Use
Sweet shops, caterers, bakeries and hotels buy cashew differently from households. You need the right grade for each use, the same quality in every lot, and a fair price for the size you actually need. This guide comes from the Mewa Mitra Experience Store at Kukerkheda Mandi, Jaipur, backed by our family’s trading experience since 2003.
Rule 1: Do not pay for size you will grind
The biggest mistake in bulk buying is using whole jumbo cashews for jobs where they will be ground, chopped or hidden. Match the grade to the use:
| Use | Best choice | Why |
|---|---|---|
| Kaju katli, kaju barfi, cashew paste | 6 pieces (kaju tukda) | It is ground anyway. Same taste, best price. |
| Gravies, korma, shahi paneer | 6 pieces or 4 pieces | Blended into the base, so size does not matter. |
| Kheer, halwa, upma, sevaiyan | 4 pieces | Bite-size pieces that spread through the dish. |
| Pulao, biryani, curry garnish | 2 pieces (splits) | Halves hold their shape and look good on top. |
| Sweet decoration, dry fruit laddoo | W320 or splits | Whole look at a sensible price. |
| Snacking trays, roasting, namkeen | W240 or W320 | Even size roasts evenly. |
| Gift boxes and premium hampers | W180 or W210 | Large, whole kernels look generous. |
Rule 2: Know what the grade name means
W stands for white, whole kernels. The number is roughly how many kernels make one pound (about 454 g). W180 has about 180 kernels in a pound, so each one is bigger; W320 has about 320. Pieces are graded by how the kernel has broken: splits are halves, 4 pieces and 6 pieces are smaller breaks. Our cashew grade guides explain every grade in detail.
Rule 3: Check a lot before you buy it
Whether you buy from us or anyone else, check a sample in daylight:
- Colour: creamy white to pale ivory, even across the lot. Dark patches or grey spots mean old or badly stored stock.
- Count: weigh a small sample and count the kernels. It should match the grade.
- Breakage: a whole-grade lot should not have many pieces mixed in.
- Smell and taste: fresh cashew smells mild and sweet. Any bitter, oily or stale smell means rancid stock.
- Crunch: it should snap, not bend. A soft kernel has taken in moisture.
Rule 4: Store bulk cashew properly
- Keep it in airtight containers, away from sunlight and the kitchen’s heat and steam.
- Open one bag at a time; reseal it tightly.
- In humid months, keep stock you will not use for a while in a cool room or refrigerator.
- Use older stock first.
Rule 5: Buy from someone who will still be there next season
For a sweet shop, the same quality every month matters more than one cheap lot. Look for a supplier who names the grade on every bag, gives a proper GST invoice, holds an FSSAI licence and lets you see the stock before you commit.

Quick answers
Which cashew is best for kaju katli?
6 pieces (kaju tukda). It is ground into paste, so whole cashews add cost but not taste.
What is the difference between W240 and W320?
W240 kernels (220–240 per pound under Indian trade grading) are larger than W320 (300–320 per pound). Both are whole; W320 is the everyday grade and costs less.
Do you supply sweet shops and caterers outside Jaipur?
Yes. Message us on WhatsApp with the grade and quantity and we will share current rates and dispatch details.
